Bubble waffle food truck finally opens after being delayed by pandemic (includes video story)

Crazy Bubble Waffle is a new dessert food truck in Miami that has finally opened after being delayed by the pandemic. Tony Rivera Sanchez sells specialty bubble waffles, lolly waffles and gelato.

Bubble waffles originated in Hong Kong. The dessert dates back to the 1950s. They are crispy on the outside, but each individual bubble is fluffy in texture.

Though Rivera Sanchez founded his company in 2018, he couldn’t open until this past March 19 due to COVID-19 restrictions.

“I started [Crazy Bubble Waffle] because in Miami there’s no business like this one right now,” said Rivera Sanchez. “The inspiration was because I was working for somebody else… I mean that’s why I wanna open my own business. I wanna do that job, but for myself.”

These days, Crazy Bubble Waffle parks at 9001 SW 127th Avenue., but it may be moving soon.
